Pieces of Eight has its origins in the California restaurant with the same name. The restaurant closed down in the 1970s but the cocktail lives on. And with me Googling around looking for new rum cocktails to try, I came across this one. With some passion fruit syrup laying around this was a match made in heaven! Tart and refreshing is the perfect description for this one. A summer cocktail is an understatement.
Ingredients
- 45 ml Aged Rum
- 45 ml Passion Fruit Syrup
- 22.5 ml Lemon Juice
- 22.5 ml Lime Juice

Citrus wheel(s)
Shake & Double Strain
Mix all ingredients in a shaker with ice and shake to chill. Server in an ice-filled glass with a wedge or wheel from the citrus.
