Ya boy Tom Collins is getting an upgrade! Thyme is such a beautiful summery herb, and it pairs so well with gin. I did a mixture of regular and lemon thyme in the infusion and made a simple syrup infused with just lemon thyme. This is another cocktail I did for specials last weekend. Cheers y’all!!

Club Soda
