Dead & Co were playing nearby, and we decided to make a cocktail. Deadheads don’t ask for tickets, they say, “I need a Miracle!” I’ve always found the French 75 too sweet. Try this version with an Absinthe rinse.

Rinse glass with Absinthia Absinthe Blanche. Set any excess aside, add a little ice water, and enjoy. Add gin, lemon juice, and simple syrup to a shaker filled with ice. Shake until chilled. Strain into the prepared glass. Top with Champagne. Garnish with a twist of lemon.
Editor's Note
An absinthe rinse cuts the sweetness of the classic French 75, adding a sharp, herbal edge to the gin and Champagne base.

Love the absinthe rinse.

This sounds like a fantastic, sophisticated twist on a classic! I love the idea of using an absinthe rinse to balance the sweetness. Do you have a favorite Champagne or sparkling wine you prefer to use for this?
