Tonight’s cocktail was inspired by the discovery that the sugar snap peas in my fridge were still good and the cucumber, cilantro and lime notes in San Miguel Southwestern Gin.

To make the syrup, start with a 1:1 ratio of sugar to water and heat to dissolve the sugar. Add in snap peas and bring to a boil. Leave to cool for a few minutes, then add the cilantro. Leave to infuse for 2 hours, then strain and chill in the refrigerator. It should keep for up to 2 weeks refrigerated. To build the cocktail, add all ingredients to your shaker tin with ice and shake well. Double strain into a chilled martini glass. Garnish with a sugar snap pea.
Editor's Note
Cilantro‑snap pea syrup and cucumber bitters turn a classic gin martini into a garden‑fresh, herbaceous sip.
