One of a recent trio of localized takes on the exotic essentials is a fantastic riff on the Jungle Bird. I’ve actually served a downhome JB in this glass before, but it was more in the vein of Shannon Mustipher’s Lorikeet than a true Jungle Bird. However, now that this delicious aperitif from the Newfoundland Distillery Co. and Terre Restaurant exists, I can adapt the much more traditional template. Combine all ingredients in a drink mixer tin with a cup of crushed ice. Flash blend, then pour into a (1989 Irving Oil “Atlantic Puffin” commemorative) highball glass. Add ice to fill if necessary. Garnish with pineapple fronds.
