A delicious Manhattan inspired cocktail which pairs rich PX Sherry with an aged Bajan rum. The nutty and grapey Sherry works perfectly to accentuate the brown sugar and dried fruit notes of the rum.

PX Sherry replaces sweet vermouth in this Manhattan riff, layering raisin and nut notes over the Bajan rum's oaky depth. Pimento bitters provide a subtle, spicy finish.
