Here's a play on the Last Word cocktail, swapping out the Gin for some spicy Irish Poitin and adding some ginger to up the spice even more. The Ginger Liqueur is a bit on the sweeter side, so I added just a splash of some Maraschino Liqueur to help balance it out. Poitin was outlawed by King Charles II in 1661 after failed attempts to collect taxes on the spirit. It wasn't legalized again until 1997.

A home enthusiast with a passion for all things tiki! Rum is my favourite poison, but I also love Whiskey, Brandy and just about every other spirit. I'm fairly new to cocktail making but I quickly fell in love with it and enjoy the pursuit of finding my new favourite libation. Cheers! ...

Editor's Note
Poitín replaces gin in this Last Word riff, bringing a rustic, grain-forward bite. Ginger liqueur and Green Chartreuse provide a spicy, herbaceous depth that lingers on the finish.

This is a fascinating take on the Last Word! The history of Poitín is so compelling—thanks for sharing that context with the recipe.
