Refreshing

Pearl Divers are great, but gardenia mix sucks to work with. When I was bartending at Wusong Road there were a few regulars that wanted pearl divers, but we didn’t have any gardenia mix behind the bar, so I set out to create a substitute using what I had. I called the result of my experimentation peony mix and turns out it’s vegan as well.

Moderately Aged Rum

Aged Demerara Rum

Peony Mix

.5 oz
Orange Juice

.5 oz
Lime Juice

Combine all ingredients into a shaking tin with 10 oz pebble ice. Whip shake for 5-8 seconds. Add 8 oz pebble ice to a chilled Pearl Diver glass. Open pour contents of the shaking tin into the glassware. Garnish with 3 pineapple fronds. Serve with a straw.
