When the taste buds are longing for the taste of sweet coconut who am I to deny them? This one is a really good alternative to a Piña Colada but served in a Martini glass and with a nice pineapple wedge makes this look pretty classy in my opinion. I believe an original Bikini Martin has a coconut rum but I'm going with a coconut liqueur with this version.

Coconut Liqueur

30 ml
Vodka

60 ml
Pineapple Juice

15 ml
Grenadine

Add all ingredients except the grenadine to a shaker. Add your preferred choice of ice and shake to chill. Double strain into a Martini glass. Pour the grenadine slowly in the center of the glass to get it nicely layered in the bottom. Garnish with a pineapple wedge on the rim and serve!
