This is a unique low abv Mai tai variation utilizing a local tropical gin from seven caves in La Jolla. It is fruity, floral, and easy to drink with overtones that consist of pineapple, hibiscus, and guava.

My style of cocktailing is familiar with a modern twist. I like to utilize ingredients that are mostly easy to get or make. I am so grateful to have had all of these opportunities to do what I love and hope to continue to do more with like-minded individuals,...

Shake all ingredients except the rum in a shaker with ice. Then dirty dump or strain and add pebble ice. Lastly float the Diplomatico aged rum on top!
Editor's Note
Gentian amaro and tropical gin redefine the Mai Tai as a sessionable, low-ABV sipper. The rum float provides a aromatic anchor to the floral, pineapple-forward profile.
