Combine all ingredients, except the xanthan gum, in a blender. Blend until the coconut mix has dissolved. Add the xanthan gum. Blend until the xanthan gum has incorporated. Add 160g of pebble ice. Blend until smooth. Open pour into a collins glass (12oz). Garnish with pineapple fronds. Serve with a straw.
