For rum infusion: Chop up a few pieces of jackfruit and infuse at room temperature for 2-3 days. Strain, pass through coffee filter, bottle. For drink: combine all ingredients, shake with ice until chilled, double strain into chilled coupe. Optional: serve with dried jackfruit snack.
