Add all ingredients, except the rum and soda water, into a shaking tin. Give it a quick stir. Fill a chilled Collins glass with ice. Add the rum. Fill the glass 3/4 full of soda water. Shake the contents of the tin down the side. Top with more soda. Garnish with a grapefruit wheel.
