The traditional service of mezcal is with orange slices and sal de gusano- a spice blend of sea salt, chili, and powdered agave worms. I wanted to bring these flavors together with cacao for a rich, spicy drink that fits the bill any time!

Cover half with a napkin and sprinkle with sal de gusano, cacao powder, and 2-4 dashes of cocoa bitters. Place the dried orange slice on the clear side. Use a cocktail pick to drag the spices and bitters around the orange.
Editor's Note
Mezcal meets cacao in this savory-sweet sour. The sal de gusano garnish bridges the gap between traditional agave service and modern mixology.
