Pornstar Martini is one of those cocktails I can enjoy any day of the week without a doubt. The passion fruit, the vanilla with the acidity topped with champagne. Nothing’s like this one! I preferably buy a vanilla bean, slice and scrape it and infuse it into a bit of vodka for a few days for a round vanilla vodka instead of pre-bought. I use 30m of lemon juice but you could easily knock off 10ml for less acidity and bring out the vanilla vodka flavour some more.

Scoop out the pulp from a whole passion fruit into the shaker. Add the vodka, lemon juice, simple syrup and then use a blender to mix it all together. Add ice and shake. Double strain into a martini glass - or perhaps a coupe. :) Pour the champagne (or any sparkling wine really) then garnish with a half passion fruit.
