Rambutan Cocktail

Submitted on: October 2, 2022
For lack of a better name, I’m going to call this a Rambutini! Sweet, delicate rambutans, ginger syrup, and a gin that isn’t too juniper forward. Aquafaba makes the whole thing incredibly silky and foamy. It’s beautiful, it’s tasty, and has the most luscious mouthfeel! Come on, let me make you a drink.

Dry shake for a full minute. Use an agitator or spring to make it extra foamy. Add a few ice cubes and shake until cold. Double strain into your chilled glass and garnish with a rambutan on a pick.
Editor's Note
Rambutan and ginger create a vibrant, tropical profile in this silky, gin-based sour. The blended fruit base ensures maximum flavor extraction in every sip.
