A home enthusiast with a passion for all things tiki! Rum is my favourite poison, but I also love Whiskey, Brandy and just about every other spirit. I'm fairly new to cocktail making but I quickly fell in love with it and enjoy the pursuit of finding my new favourite libation. Cheers! ...

Float the mezcal on top Pineapple-Ginger Syrup - 1.5 cups of fresh pineapple juice - 0.75 cups of fresh ginger juice - 2.25 cups of superfine sugar Blend everything together till sugar is incorporated
Editor's Note
A tiki-fied Penicillin riff. Pineapple-ginger syrup provides the backbone, while a mezcal float adds a smoky, aromatic finish to the rum-forward base.
