Banana Daiquiri
Submitted on: March 20, 2021
I certainly did not invent the banana daiquiri, but I do love them! For this version, I split the base with Van Oosten Batava Arrack, which is one of the oldest spirits on the planet. The precursor to rum, if you will. Made with sugar cane and red rice, it has a funky, unique flavor. I wanted to pair the base with the dark aged Hamilton to give a unique flavor profile that works with the banana du bresil liqueur.

Shake all ingredients with ice. Double strain into coupe. To brûlée the banana slice, sprinkle cane sugar granules on banana slice and burn sugar with small torch.
Editor's Note
Batavia Arrack and Hamilton 86 create a funky, molasses-rich base for this elevated Daiquiri. The brûlée banana garnish adds a necessary aromatic finish.
