Tom Yum Collins
Submitted on: March 20, 2021
I go crazy for Thai flavors like lemongrass, kaffir lime leaves, ginger and chilis. The secret to this is the tom yum syrup. I combined fresh chopped ginger, galangal, kaffir lime leaves, lemongrass, small Thai chilis and coconut water with simple syrup, cooked at 130 degrees in an immersion circulator for an hour. Strain and enjoy.

Editor's Note
A Collins reimagined with the vibrant flavors of Thailand. Funky Batavia Arrack and floral gin meet a complex, house-made syrup of lemongrass, galangal, and chili for a spicy, aromatic highball.

This sounds like an incredible flavor profile! Do you have any tips for sourcing the best galangal and kaffir lime leaves for the syrup?

I don’t really find this to be a recipe, since it depends on a syrup for which there is no recipe. Can we see quantities on the ingredients for the Tom Yum syrup?
