This is one of the more well-known tiki cocktails and it is my personal favourite of the tiki-style drinks. I love how the bitterness of the Campari plays off the rum. This cocktail was created at the Aviary bar in the Kuala Lumpur Hilton in 1973 for the hotel opening. Pineapple fronds for garnish give the appearance of bird plumage.
Ingredients
- 1.5 ozDark Rum
- 0.75 ozCampari
- 1.5 ozPineapple Juice
- 0.5 ozLime Juice
- 0.5 ozDemerara Syrup

Pineapple wedge and Maraschino cherry
Shake & Strain
Hurricane
Combine all the above ingredients in a cocktail shaker with ice and shake until chill. Strain into a hurricane glass or tiki mug filled with crushed ice. Optionally, add a few dashes of the bitters of your choice. Garnish with pineapple wedge and a Maraschino cherry.
