In a cocktail shaker, combine all ingredients besides the club soda with ice. Shake until the cocktail is chilled and combined. In a Collins glass with ice add 1oz of club soda, then double strain your cocktail topping with the remaining club soda. Gently stir and garnish with a grilled tomato.
Editor's Note
A classic Tom Collins gets a savory, smoky overhaul. Shaking with grilled cherry tomatoes lends umami depth that plays off the gin's botanicals, creating a refreshing and complex brunch sipper.

This is such a creative way to bridge the gap between a savory brunch cocktail and a refreshing Collins! The grilled tomato element sounds like a fantastic addition.
