One of my favorite things at Disneyland has always been the Tiki Room Dole Whips! They are not only delicious, but a unique treat that for the longest time I thought was only available at Disneyland alone. But then I moved to a small town outside of Las Vegas and discovered dole whip being sold at our mom-and-pop fast food joint, Chilly Jillys! Blackthorn Sour

Start with a scoop of pineapple Dole Whip; if you don’t have Dole Whip, this cocktail is equally delicious without it. Pour in the mezcal (feel free to bump it up to 2 oz) then pour in equal amounts of orange juice and pineapple juice. Finish with a float of chambord (I add at least .5 oz). Garnish with a cherry and/or pineapple slice.

Editor's Note

Mezcal adds a smoky edge to this tropical Dole Whip riff. A Chambord float provides a deep berry finish to the pineapple-forward base.
