Combine all ingredients (except Islay scotch) in a cocktail shaker and shake until frosty. Open pour into a double old-fashioned glass. Slowly pour Islay scotch over surface to float and garnish with candied ginger.
Editor's Note
This tiki-inspired riff on the Penicillin uses a trio of scotches to build depth. The Islay float provides a smoky finish that cuts through the spice of ginger and falernum.
