This is far from my usual go-to palate or style when coming up with a new recipe, but I wanted to make something a bit different for the holiday season, and something my partner would really love. Luckily, she did. Unluckily, I can't get creme de cassis where I live, so it will need to be used sparingly over Christmas!

View MoreAdd absinthe to a chilled coupe. Roll to coat the inside. Discard excess. Add remaining ingredients to a cocktail shaker. Dry shake then wet shake. Fine strain into absinthe-rinsed coupe and float a single star anise in the centre.
Editor's Note
Rosemary-infused honey and a whisper of absinthe transform this berry-forward sour into a festive holiday classic.
