Strawberry Tart

Are you a shrub fan? Shrubs are an excellent way to preserve or use up fruit that’s not picture perfect. A little sweet, a little tart, and totally customizable. You can use any fruit and vinegar (with at least 5% acidity for safety). Here I’ve used local strawberries and both apple cider and white wine vinegar. For this refreshing sipper, I added gin, lemon and a rosemary simple to the shrub. Thirst-quenching, perfect for hot weather and farmers market hauls. Cheers y’all!!

Hi there! I've been a bartender at the same restaurant for over 10 years. My favorite spirits to work with are rum (love a good tiki drink!), gin and amaros. I love to garden and I often use the herbs and produce I grow to make syrups and infusions. Cheers y'all! ...

Editor's Note
A classic gin sour structure gets a modern update with a house-made strawberry shrub. The shrub's tart, fruity character is balanced by an herbal rosemary syrup, creating a complex and thirst-quenching highball.

This sounds so spring forward, Yum. How long do you let the strawberries sit in the vinegar before you use it?
