This drink was made to fully express the delicious wine nectar that was gifted to me by Domaine Santé. I used the Tom Collins template, subbing in a little grappa in the base and using a wine barrel-rested gin. It definitely reads as a very wine-forward expression of the classic cocktail!

Shake all ingredients except soda with ice until chilled. Fine strain into a Collins or highball glass with fresh ice cubes. Top with soda water and briefly stir to incorporate. Garnish with a lemon twist.
