Fresh and crisp, the Dingle Irish Gin is bright and easy to enjoy both on the rocks and in a cocktail. The opening aroma is clean juniper (that classic gin scent), followed by soft floral notes and a hint of fresh herbs. This instantly transported me to walking through an evergreen forest on a cold, misty morning, when the air is filled with the scent of pine needles. On the palate it starts crisp and slightly citrusy, then opens into gentle flavors of mint, pine, and a light berry sweetness that almost reminds me of blackberry. There’s a mild peppery warmth near the end that rounds out the sip and makes me come back for a second sip almost immediately.The finish is smooth and refreshing, with a cool herbal note that lingers. It feels like the perfect gin for relaxed evenings, quiet conversations with friends, or a slow weekend cocktail when you want something bright and uplifting.
