For an Instagram Cocktail Competition for this month, we were tasked with revisiting a drink that we thought we could make better. My choice was part of a short-lived series I was attempting. The challenge was to make something earthy with gin, and the first go-around saw all the earthiness drowned out by an overpowering ginger ale and a much too lightly flavored mushroom tea. Ingredients
- 1 ozTanqueray TEN
- 1/2 ozBozal Mezcal
- 1/2 ozCynar Ricetta Originale
- 3/4 ozLemon Juice
- 3/4 ozMushroom And Curry Syrup
- 2 drop(s)Bittermens Xocolatl Mole Bitters
- 1 eaSprig Of Rosemary
- 2 drop(s)Saline Solution

Mushrooms and a Curry Rim
Shake & Double Strain
Coupe
Slap the rosemary and add it to the shaker tin with all other ingredients. Shake well and double-strain into a curry-rimmed coupe glass.

A deeply savory sour that balances earthy mushroom and curry notes against smoky mezcal and bitter artichoke. Bright lemon and piney rosemary lift the profile, creating a complex, thought-provoking cocktail.
