The Jack Rose was a popular cocktail in the early 1900s when the Wright Brothers were about to make their first flight. Absinthe was also very popular, and apparently the Wright Brothers were VERY fond of lemons, so this riff plays into all of those details. I have a confession: I have been using Pernod Pastis and calling it Absinthe this whole time. I know, what a fraud, and I understand if you can no longer trust me. But if you still have faith, just know I bought the cheapest bottle of Absint...

Editor's Note
A bold Jack Rose riff where a heavy measure of absinthe stands shoulder-to-shoulder with applejack. The result is an intensely herbal and spicy sour, grounded by rich pomegranate and cherry notes.
